Fruit Srikhand

Fruit Shrikhand is yogurt based sweet dish. Yogurt is mixed with sugar and fresh fruits. It is popular Indian dessert. Traditionally, shrikhand is served with puri in Gujarati food.
 

 
Ingredients :
Fresh Curd – 800 gms
Castor Sugar – 4-5 tblspns
Milk – 2 tblspns
Saffron – 0.5 tsp (a few strands)
Cardamom Powder – 1.5 tsp
Nutmeg grated - 0.5 tsp
 
Fresh Fruits-
Kiwi – 2
Banana – 1
Papaya – 1 slice
 
 
Method –
 
Preparation –
Tie fresh curd in a muslin cloth and hang it near the sink for about 2.5 to 3 hours to get hung curd. Shrikhand is slightly sweet n sour it taste. The fresh curd would turn into a little sweet sour taste.
 
The muslin cloth would help all the excess water in the curd to be drained away and you would get thick curd called hung curd or “chakka”
 
Steps-

  • Place the hung curd in a deep bowl.
  • Add castor sugar.
  • Add milk – (You can use any milk at room temperature)
  • Blend well with a blender. (used for making icing)

 
Add flavourings :-
Add grated nutmeg.
Add Cardamom Powder.
Add Saffron.
Give it a good mix.
 
 
Add Fruits:-
Scoop all the fruits in round shape.
Add these to the above.
Reserve a few kiwi for the garnish.
 
 
Presentation :-
Serve in small goblets.
Top it with a fresh kiwi ball.
 
Shrikhand is ready to serve.
Taste best when chilled.
