Dal Baati (A speciality of Rajasthan)

Rajasthani cuisine is a splendid array of colorful, spicy and unique dishes. Rajasthani food is incomplete without the mention of the famed Dal-Baati-Churma, a distinctive dish of the state. A delicious, rich, flavorful and a whole meal in itself. Baati is essentially a wheat dumpling. Made out of whole wheat and cooked in a tandoor oven. It is always eaten with dal. It can either be plain, or may have various kinds of fillings, including onions, peas,mix vegetables, etc. Daal-Baati is best accompanied with Churma(coarsely ground wheat crushed and cooked with ghee and sugar), but i mostly prefer making and eating only Dal-Baati. This is a dish that many people acquire a taste to. Many people do not like it the first time they have it. But eat it 2-3 times and i am sure you'll be hooked for life!

Mini Frittatas

A Frittata is a type of an Italian baked omelet, either simple or can be filled with any variety of vegetable, meat, and cheese, very much like a crust-less quiche or scrambled eggs. A Frittata can be prepared in a frying pan just like an omelete or can be baked in a pie plate, cake pan, or cast iron skillet.

Tricolor Fried Rava Idli

This Lovely snack is completely my innovation in the world of Rava Idlis...I love Rava Idlis and always try to experiment in making them much more interesting and tastier. Earlier i use to experiment with the stuffings...then one day for my hubby dear's office breakfast party, i planned to make Stuffed Idlis along with the Mini Frittatas. So.... to make the white color idli look more interesting, i thought of making them colorful and then the idea of making them tricolor came to my mind.
Beautiful, healthy and very tasty, slightly fried stuffed idli was a superhit breakfast item in that party and everyone was asking for the recipe.. So here is the recipe for this beautiful snack that goes great with green chutney or ketchup.
